2nd Frida Kahlo Gastronomic Festival
This year we celebrated the 2nd Mexican food and drink festival, where the bar area played a very important role as around 17 drinks were created, inspired by ancestral Mexico, using ingredients such as prickly pear syrup, cocoa, chili peppers, and worm salt, but above all, our iconic Mexican drinks: tequila and mezcal.

Many of our guests ask if it is possible to go down to the beach at night to see the turtles arrive to lay their eggs. We completely understand how tempting it must be to see them, but please, if you see sea turtles arriving at the beach at night during nesting season, follow these simple rules:

Inform the prevention staff if you see a turtle at night.
Do not shine flashlights or cell phone lights in the sea turtle's face (the light can cause the female to abort the nesting process).
Do not take photographs using flashes. This high-intensity light can be even more annoying than flashlights.
Try to stay out of the turtle's sight until she begins to lay her eggs; otherwise, you may scare her and she will return to the sea.
Do not touch the turtle.
Do not make noise.
Do not smoke.
Do not handle the eggs.

Once the turtle lays its eggs, she returns to the sea, and the eggs are placed in our "protection pens" where we look after them until the turtles hatch and can be released into the sea.

Releasing turtle hatchlings into the ocean is, without a doubt, one of the most fascinating and enriching moments you will ever experience. Follow the hotel rules to protect the turtles and prepare to live an incredible experience.

Drinking straws, sippers, tubes, or whatever you call them. Are they really that necessary?

Little by little, we observe that our planet is increasingly asking for our contribution to stop pollution.

Last September, the new Law for the Prevention and Comprehensive Management of Solid Waste was presented in the state of Quintana Roo, seeking to improve the quality of our environment by prohibiting the use of plastic straws, styrofoam, and polyethylene bags.

If approved and implemented, plastic waste would decrease and, in the long run, the improvement would be more than visible.

While this initiative goes through approvals and analysis, we do not want to stand by without doing something about it. That is why at our Royal Solaris Cancún, GR Solaris Cancún, and GR Caribe by Solaris hotels, the use of plastic straws is being limited, and through testing, we are looking for the best ecological option to offer for drinks that require one, such as those made with crushed ice.

Meanwhile, in Baja California Sur, reforms were approved for the State Law for Ecological Balance and Environmental Protection, which will function in a similar way: the elimination of the use of plastic bags, expanded polystyrene (styrofoam) containers, and straws. This paves the way for a major change since, according to statistics, around 138,032 straws and styrofoam containers are thrown away on the La Paz boardwalk every month.*

Royal Solaris Los Cabos is also joining this effort, where, just as in the Solaris hotels in Cancun, the use of straws on the premises has been reduced.

In conclusion, we have stopped offering drinks with this utensil in all our hotels, so if you are staying with us, your drinks will not come with one... What can you do if you need or want to use a straw? We have the following tips for you:

Perhaps you have read on many internet pages, social media, or through other means about the accumulation of algae on the Caribbean coasts of Mexico. Still have doubts? Here we will provide you with information to understand the situation of Cancun and the Solaris Hotels.

To begin, what is sargassum?

This marine algae originates from the Sargasso Sea, a marine area in the northwest Atlantic, near the Bermuda Islands, which is considered an ecosystem inhabited by various species of eels, crabs, shrimp, and squid.

Has there always been sargassum on the coasts of the Mexican Caribbean?

The answer is: Yes. Normally, algae travel with sea currents towards the coasts, including the coasts of Cancun. It is a normal process.

The amount of sargassum and even its arrival at a certain location depends on sea and air currents, as just as there can be days when the beach is clean, other days the same beach may have an accumulation of algae on its coast.

Does it affect the Solaris Hotels in Cancun?

Fortunately, the location of the three hotels in Cancun is an area where sea currents change and there is a lot of movement.

Yes, we do have sargassum arrival, but it is not the same as in other parts of the Mexican Caribbean (such as Puerto Morelos or Tulum).

But we also take responsibility; it is a fact that beach cleaning is carried out every day early in the morning, thus preventing plastics and other waste from reaching the sea. But now, this work has been doubled: a team focused on keeping the beach clean is present from 6 am to 6 pm, concentrating sargassum from the coasts and removing it.

We also have the support of tractor cleaning, which helps to remove sargassum and flatten the sand on the shore, so the Solaris team can carry out its work with better results.

Pancho Solaris is the official mascot of Hoteles Solaris de México. The idea arose as an icon—just like a logo—to represent us. After six months of studies and guest surveys, the results showed a preference for tropical birds. Thus, Pancho was created based on a pelican and an albatross, both seabirds.

The blue color of his plumage was chosen in reference to our destination, as this color is associated with the sea, the sky, freshness, and cleanliness—elements our guests associate with coming to vacation at the beach.

But Panchito, as he is also affectionately called, is not just an image or a symbol; his personality is what defines him. He is a friendly and joking character who represents the cordiality and dynamism of the service at Hoteles Solaris de México. He is super fun! Yoga refers to a traditional physical, mental, and spiritual discipline that originated in India. This word is associated with meditation practices.

Yoga results in:
The union of the individual soul with the divine.
The perception that the "self" is spiritual and not material.
Physical and mental well-being.

This offers high therapeutic value in the physical, mental, and spiritual realms, which produces a state of harmony, allowing the energy of the body and mind to flow. It strengthens the body, improves the digestive and immune systems, and also enables a state of mental calm.

So, why abandon inner peace on vacation? Not at all! This vacation, you won't have to give up practicing your favorite physical discipline simply because you are away from home.

At Solaris Hotels in Mexico, we believe it is very important to start the day with this great discipline, so we hold our relaxing classes with incredible instructors on the beach area almost every morning.

The difference of practicing yoga on the beach focuses on comparing the scenery and the temperature surrounding you; the sea and the sand allow you to create new neural connections, which reduce stress levels for everyone who tries it.

It is recommended to practice yoga on the beach early in the morning or at sunset to avoid the heatwave. Also, keep in mind that the sun provides us with vitamin D, which helps the body absorb calcium.

Below is a list of the benefits of doing yoga on the beach:
You breathe cleaner air, as the body receives better oxygen and nitrogen.
There is better oxygenation for the mind and body; take the opportunity to breathe deeply to cleanse your lungs with clean air.
You improve your balance in poses, because the sandy surface forces you to @Search@ for stability by coordinating the muscles of the body.
Our body produces vitamin D when exposed to sunlight.
On the other hand, the sensation of being in front of the sea, listening to the waves, feeling the breeze, and stimulating the senses is very pleasant, as this will allow for better concentration, meditation, renewal, and greater relaxation for the mind and body.

We have 10 ideal yoga poses to practice on the beach:

Warrior I
To begin your yoga day on the beach, it is convenient to start with a level that is not too high. The Warrior I pose is ideal for the first few days at the beach. With your feet together and by the seashore, take a wide stride backward while gently bending the knee of the front leg. Remember not to let your knee go past your toes when lowering yourself. Keep your palms together, raising them toward the sky above your head.

Camel Pose
In this pose, you manage to stretch your whole body and expand your chest by taking your arms back. Sitting on your heels, go on your knees, place your hands on your hips, and begin to breathe deeply, applying pressure to your hips to start arching your back backward. Tilt your head back as well until you look at the ceiling and grab your ankles with your hands.

Downward-Facing Dog
Sitting on your heels, begin to walk your hands forward, thus extending your body until you are, little by little, in the shape of a triangle with four points of support. Apply pressure against the sand while extending your legs and arms at the same time. It is important to drop your head between your arms to protect the lumbar area and prevent injuries.

Half Lotus
Sitting with your legs crossed, bring your right foot toward the thigh of the other leg, underneath it. You must place your left foot, little by little, on top of your right thigh.

Tree Pose
The tree pose is one of the basic balance poses in yoga. Standing with your back straight, fix your gaze on a specific point, breathe, and begin to lift your left foot to place it on your right thigh. Then, bring your palms together in a prayer position over your chest and slowly raise them above your head. Repeat with the other leg.

Warrior II
This position is the second variation of the initial warrior position. Separate your legs simultaneously so that they are about a meter apart. Raise both arms parallel to the ground with your palms facing down. Exhale and begin to lower yourself little by little by bending your front knee. It is important to keep the hips at the same angle, ensure the knee does not go past our front foot, and keep the arms raised and straight.

Upward-Facing Dog
This pose is perfect for stretching the spine and lumbar area well. Lie face down in a prone position (with your head to the side) with your arms at your sides. Bend your elbows and press your palms against the beach sand. Inhale and lift your hips, chest, and head.

Side Plank
Start in a plank position. Transfer your body weight to the hand you are going to keep pressing against the sand and to your feet. Align your body in a side position with your legs together, one on top of the other. Raise the opposite arm, look at the thumb of that hand, and lift your hips. Repeat the same on the other side.

Dancer Pose
Standing, bend one leg backward until you manage to hold it with the hand on that same side. Relax your chest, lean forward, and contract the inner part of your body. Try to form the largest arch possible with your back by pushing with the raised foot backward and upward. Extend the other arm forward to make it easier to maintain your balance.

Extended Side Angle
Bend your knee and move your right forearm until it rests on your right thigh. Extend your left arm toward the ceiling, over your head. Open your chest and take at least three breaths in this pose. Then, do the same on the other side.

Remember that it is very important to pay attention to your breathing in each exercise to achieve better performance.

This vacation, there is no reason to abandon this incredible exercise, because the beach can be the best place for your mind and body to reconnect.

What is it?
Flamed coffee is a drink prepared with coffee and spirits. Also known as flambéed coffee, a term that comes from the French "flamber" (which means "to make flames"), it is a way of cooking with alcohol (ethanol).

How is it made?
We have a signature procedure with a special touch to make it unique at Solaris: The first thing our specialists do is prepare the container where the coffee will be served, which is rimmed with sugar in order to add an extra decorative touch and additional flavor to the cocktails. This is the first step, because to achieve the sugared rim on the edge of the glass or cup, it must be turned upside down and placed on sugar.
Once the container is ready, a generous spoonful of whipped cream previously prepared by our great kitchen staff is added. It is followed by approximately a cup of American coffee, which causes the whipped cream to remain on the surface due to its light texture from being whipped.

Now the spectacular process begins!

A portion of coffee liqueur is taken and another of whiskey, tequila, brandy, amaretto, or xtabentún is added in a metal container. These ingredients are placed over fire and passed through the air into another identical container, thus pouring this mixture over the flame, which, being flammable, gradually begins to hold fire within it. A spectacle that dazzles everyone waiting for their coffee. This process burns off about 50% of the alcohol, which gives it a totally different flavor.
Upon finishing this process, and with the mixture literally in flames, it is served in the container that had been prepared previously. Et voìla!

Types of coffee available at our hotels
You might be wondering, what are the flavors you can enjoy when you stay at a Solaris hotel? Here are the names of each one and the liqueur that distinguishes them:
Mexican, based on tequila
Irish (or Scotch at GR Solaris), based on whiskey
Mayan, based on Xtabentún, a liqueur of Mayan origin, produced in the state of Yucatán, from the honey of bees fed on the xtabentún flower. (Only available at hotels in Cancun)
Spanish, based on brandy.
Italian, based on amaretto. (Only available at hotels in Cancun)

Estimated to be 20,000 years old, it is the northernmost coral reef in the eastern Pacific Ocean. It has a series of hard coral fingers on top of rocky outcrops parallel to the coast, occurring progressively in deeper waters offshore.

The area was designated a national park in 1995, a UNESCO World Heritage site in 2005, and a Ramsar Wetland of International Importance in 2008.

Tequila is a drink that represents Mexico. As we mentioned previously in The Tequila Process, it is a product originating from a specific place in our country, a drink that everyone knows, but knowing how to drink it really has its own science.

How to drink tequila?

Although the best-known way is using "caballitos" or shot glasses, the correct way to drink tequila is with a brandy snifter, which will begin to reveal the true properties of the drink. The correct or recommended time to drink tequila and enjoy all its properties is 25 to 30 minutes; that is, it should be left poured for this amount of time before you start drinking.

Now, the first thing you have to keep in mind is the rhythm. Everything is slow.
To start, take just a sip (forget about downing it all at once!), you should inhale to perceive the aroma of the type of tequila you are drinking, and the moment you feel the liquid passing into your throat, exhale through your mouth; this way you will feel how the flavor of the agave rises to your throat: a completely different sensation than drinking a shot in one go.

Fun facts:

Tequilas come in different "categories" and to be able to differentiate between them, you need to know the aging time, that is, the time the tequila is kept in barrels until it is bottled, thus they are classified into:

-Tequila Joven: One that is not stored, but is bottled directly.

-Tequila Blanco: One that is kept in the barrel for one month.

-Tequila Reposado: The storage time is from one month to one year.

-Tequila Añejo: It is kept from one to 3 years.

-Tequila Extra Añejo: The storage time for this drink is from 3 to 12 years.

It is also important to know how to differentiate tequila from mezcal, which is known for being made in Oaxaca and can be made with different types of agave, while tequila must be made with only one type of agave, the Agave Tequilana Weber, Blue variety. Another fact is that tequila can be 100% Agave, which means it does not contain any other element; or it can be 51% Agave with the remaining 49% composed of various sugars.

If you wish to feel the different flavors that make a tequila, such as the aging process and the type of storage, it is not recommended to mix it with other products (juices for example, or even lime and salt) because it begins to lose these properties.
Although tequila can be enjoyed in good cocktails, our Food and Beverage Manager at Royal Solaris Cancún and GR Caribe by Solaris, Rodrigo Jácome, recommends that if you prefer to drink margaritas or beverages prepared with tequila (which we make very well at Solaris!), it is advisable to do so with Tequila Joven or Blanco.

Yucatán is one of the states of the Mexican Republic where the Mayans predominated. In this state, in addition to having Magical Towns and beautiful cenotes with crystal-clear waters, there are also regions where the ancient Mayans resided and where impressive events took place; and Chichén Itzá is the ideal place where every March 21st, thousands of people gather to witness the spring equinox, but mainly, to see Kukulkán descend from the heavens.

Located just 115 km east of the city of Mérida and 185 km from Cancún, Chichén Itzá is one of the main archaeological zones in the state of Yucatán, and the Pyramid of Kukulkán is considered one of the Seven Wonders of the Modern World. For this and more, it is recommended to visit this place!

Every March 21st, thousands of people meet on the esplanade of the Pyramid of Kukulkan, where at approximately 3:45 pm the sun, by projecting its rays, causes triangular shadows to gradually form on the 9 lateral platforms of the pyramid, which "descend" to the pyramid's base, giving shape to the magnificent feathered serpent.

The visual effect is something magical and worthy of appreciation; people stand up and applaud nature by extending both arms and wearing white clothing to fill themselves with energy, just as the Mayan priests did in ancient times.

A hotel is an organization comprised of different areas, which in harmony achieve the effectiveness of its function and mission.

There are many, such as reception or the food and beverage department, which are known for directly serving the guest's needs; they are staff members known physically and who even come to form friendships with the guests.

However, one of the great tasks and responsibilities falls to the Housekeeping department, which, like all the staff that make up the hotel, works hard to maintain cleanliness, order, and that aesthetic in the decorations that liven up the hotel.

They are not as well-known as a waiter, entertainer, or bartender might be, but they are certainly there. A department that is mostly women, all members have the same level of importance.

And their work is so subtle, let us explain: When you enter your room and find everything tidy, it seems like it was a cleaning ninja or magic... This is the work of the room attendants, who are in charge of cleaning, rearranging, and replenishing the products in your room. All in record time!

What about cleaning the hallways or common areas? You don't always see them, but these people are recognized for their work in public areas. Even though everyone passes through, uses, or accidentally makes a mess by spilling their drink in the lobby - for example -, the public area staff will always be on guard to keep everything impeccable.

Or when you stay several days at the hotel, or simply want to keep your clothes clean, that is when you turn to the laundry services. There, the staff is extremely careful with the garments they handle, because washing might sound "simple" but doing it correctly is a real challenge.

On January 21st, Mariachi Day is celebrated in Mexico, recognized as Intangible Cultural Heritage of Humanity by UNESCO.

Mariachi is traditional music and a fundamental element of Mexican culture through which values, heritage, history, and different indigenous languages are transmitted.

Originally, these musicians played 'sones' from the west of the country, but since the 1930s, they have included huapangos, rancheras, corridos, jarabes, minuets, polkas, walloons, schottisches, waltzes, serenades, and traditional songs of rural life in their repertoires.

Some of the most important Mariachi composers have been José Alfredo Jiménez, Tomás Méndez, Rubén Fuentes, Gilberto Parra Paz, Manuel Esperón, Vicente Fernández, and Juan Gabriel, among many others.

Did you know that Mexico has the greatest variety of sweet bread in the world?

Bakers and artisans of Mexican cuisine are known for always reinventing themselves with creations full of flavor and color. This is the result of the importance of food in Mexican celebrations, as it is an essential element.

Just as the Day of the Dead is attributed to Pan de Muerto or Pibipollo, or turkey to Christmas; Three Kings Day (or Día de Reyes) has as its representative the Rosca de Reyes: an oval-shaped figure made of sweet bread, decorated with candied fruits.

A tradition that is maintained in Mexico as it is an occasion for family or friends to have a reason to gather and socialize, and it certainly is a delicious reason!

But unlike other Mexican dishes, inside the bread of the rosca, you can find baby-shaped figures, at least four of them. These hidden figures represent the baby Jesus and how he was hidden from King Herod.

You may be wondering, what happens with the dolls when it's time to eat the rosca? There is a dynamic in Mexico: each person takes a turn to cut their chosen piece of bread from the rosca, and whoever finds a doll inside their slice must offer tamales on "Candlemas Day" (February 2nd), this day being another religious celebration.

The rosca is truly a delight that no one should miss if they have the opportunity to try it, in addition to being part of a celebration full of fun.

The term posada (inn) comes from the story where Mary and Joseph travel from Nazareth to Bethlehem and, unable to find a place to stay and with Mary about to give birth, they take shelter in a stable.

But in Mexico, the term and the celebration of the posadas evolved over time...

It began in the late 1580s, a time when masses began to be celebrated for nine days. Little by little, it became a celebration that included the entire population meeting in the streets, filled with songs, dances, and, of course, prayers. The posadas then began to be celebrated by different social groups, where the people attending each celebration varied, and that is how they moved from the streets into homes.

It was from the 20th century onwards that Mexican posadas took the form of the traditional celebration: nine days before Christmas, from December 16th to the 24th, gatherings are held that include reenactments of the pilgrimage of Mary and Joseph accompanied by chants.

The celebration begins when the hosts represent the innkeepers and the guests represent the pilgrims, who ask for shelter by singing the litany to request lodging. Upon finishing this presentation, everyone goes into the homes to pray, and subsequently, dinner and family time are enjoyed.

Nowadays, it has become popular to call any non-religious party held in December before Christmas Eve a "posada," filled with food, drinks, the piñata, and, of course, friends ;)

As we mentioned in our previous article "Turtle Season 2017", from the month of May to September, the arrival of this marine species takes place in the Mexican Caribbean, with the purpose of laying hundreds of eggs.

Once again this year, Hoteles Solaris de México, committed to the care and preservation of sea turtles, prepared and certified itself to protect this wonderful marine species during the season.

WHAT HAPPENED THIS 2017 SEASON?

We are proud to share the results of the 2017 season closing, as among our three hotels in Cancun, we had a total of just over 30,000 turtles released, the result of the 500 nests that we cared for day by day.

This great result was thanks to the monitoring and supervision carried out by the prevention department (*staff certified for this task) 24 hours a day, which is based on the inspection, relocation, and control of the nests, which are classified by turtle species, measurements, number of eggs deposited, and approximate hatching date.

It is important to mention that prior to the arrival of the sea turtles, one of the most important tasks that must be performed is the creation of a space for the relocation of the eggs; creating nests that are as safe as possible from both predators and external factors such as unfavorable weather conditions.

In the face of situations such as storms, as was the case with tropical storm Nate last October, eggs were recovered from the nests and kept safe in thermal boxes filled with sand taken from the same nest where they were found, placing them in a dry, cool, and safe place within the hotel facilities; each of these boxes had the nest's information label. They were checked daily, always based on the possible hatching dates, managing to release all the protected turtles.

This is how we demonstrate a small part of our great commitment to the fauna of Cancun, particularly these species of sea turtles, since some of them are in danger of extinction and their preservation begins with our help.

This great work has also made us worthy of recognition from associations, the Directorate of Ecology, the Navy, and the State government, which year after year motivate us to always give our best effort.

There are many unmarked roads in Baja California Sur, Mexico. There are moments worth capturing forever. Not every day of our lives do we have the opportunity to be just a few meters away from a humpback whale.

In Los Cabos, during the months of December to March, you have the opportunity to see these imposing mammals up close while they are in their breeding season.

The impressive gray whale arrives in Mexican waters to play, mate, give birth, and also to show off to curious visitors, offering one of the most incredible natural spectacles on the planet. Very close to the boats, these animals rise vertically out of the water to take a look around, jumping joyfully with their 40 tons and kicking up clouds of water with the wide lobes of their tails, which they move up and down to swim. This movement is called spy-hopping and can last up to 30 seconds.

Humpback whales are the most common species that can be observed in the Sea of Cortez. It is also an impressive sight to see them breathe and slap their tails against the sea. Orcas can also be seen during the winter and, in smaller numbers, Bryde's and minke whales.

Life and death are an emblematic symbol that has caused admiration, fear, and uncertainty for human beings throughout history. One of the most captivating traditions in Mexico is the Day of the Dead, recognized by UNESCO as Intangible Cultural Heritage; it is a very important day for Mexicans, not as a common party, but as a celebration of life after death and the memory of loved ones who are no longer with us.

Many elements stand out in this celebration, for example, food or offerings, but the most iconic are the skulls, with La Catrina being the protagonist of this day.

Created by José Guadalupe Posada, La Catrina represented not only the dead but also a social critique of people who denied their indigenous roots to appear part of high society. For this reason, La Catrina initially only wore a hat while the rest was the naked body of the skull, with the bones representing poverty and the hat being the hallmark of European high society in Mexico.

Some time later, muralist Diego Rivera painted her with the elegant clothing we know today, and she became a very important figure for Mexican culture; it was no longer a critique of the population, but rather she became an icon of the Day of the Dead.

But hand in hand with this, we have another type of skull, which are known as Calaveritas and are literary in nature.

These are verses that contain rhymes about the death of a person. It is not about a real death, nor does it even have to be a deceased person or someone in specific; it is a satirical way of describing personality traits or relevant aspects about them that can be humorous.

But just like La Catrina, their origins were not actually these; when they were created, calaveritas were made to mock members of the state or government, which is why they were long banned or censored until their publication in a newspaper in 1840.

The International Day of Peace is celebrated around the world every September 21st. The General Assembly has declared it a day devoted to strengthening the ideals of peace, both within and among all nations and their peoples.

The International Day of Peace was established in 1981 by the United Nations as an annual celebration of non-violence and ceasefire worldwide. Each year, many people everywhere around the world pay tribute to peace in various ways.

The International Day of Peace offers people around the world a common date to think about how they can contribute, individually, to ensuring that natural resources are managed sustainably, reducing the potential for conflict and paving the way for a sustainable future, "The future we want."

This year the campaign is titled "Together for Peace: Respect, Safety and Dignity for All," following the spirit of TOGETHER, a global initiative whose goal is for people who have been forced to leave their homes in search of a better life to enjoy respect and safety and live with dignity. TOGETHER was launched during the Summit for Refugees and Migrants held on September 19, 2016, and brings together the entire United Nations system, the 193 Member States, the private sector, civil society, academic institutions, and citizens to support diversity, non-discrimination, and the acceptance of refugees and migrants.

Mexico is characterized by its people, who are cheerful and have a very peculiar sense of humor, where language and its meaning are everything.

The bombas yucatecas are short verses, commonly compliments, that must always rhyme. They are said to dance partners when the jarana (a dance and musical form originating from the Yucatán Peninsula) pauses. In that moment of silence, the word bomba is shouted to the audience, the bomba is recited, and it finally concludes with the same shout of "¡Bomba!"

They are usually flattering in content, using words in a very clever way that gives the impression of improvisation and causes a certain type of amusement.

They have their origins in the Spanish coplas invented several centuries ago, which over time expanded into Spanish-speaking countries and adapted according to the people of each place.

The Yucatán Peninsula is full of traditions of Mayan and mestizo ancestry, and the jarana dance is one of them, which is why the bomba was originally recited in the Mayan language, although today it is more common to hear them in Spanish.

Tequila is a distilled beverage native to the municipality of Tequila in the state of Jalisco, Mexico. It is made from the fermentation and distillation of juice extracted from the agave, particularly the one known as blue agave. It is perhaps the most well-known and representative drink of Mexico in the world.

1. AGAVE The production of Tequila begins with the planting of the agave, which is a Greek word that means admirable or noble. They are grown in clay soils with a semi-dry climate without sudden changes in temperature.

2. SHREDDING The purpose of this process is to prepare the agave fibers to extract the sugars by tearing the agave hearts as finely as possible by passing them through three consecutive shredders.

3. EXTRACTION During this process, the sugars contained in the shredded agave fibers are extracted in the form of a solution of water and agave sugar through a diffuser to perform a gentle extraction process. From here, the agave juice and bagasse are obtained. The latter is transformed into compost for the fields.

4. COOKING The sugars contained in the agave, such as inulin, are complex compounds that must be transformed into fermentable sugars through a hydrolysis process. It takes up to 6 hours to complete the conversion of inulins into fructose and glucose.

5. FERMENTATION Fermentation is carried out in stainless steel tanks using a proprietary blend of yeasts and nutrients. Each tank lasts from 24 to 28 hours with temperatures that vary from a start of 32° and ending up to 37°.

6. DISTILLATION The first distillation is carried out in distillation columns; in this step, water is removed and the alcohol from the fermented must is concentrated. Depending on the brand, the second distillation is done in stills to obtain a tequila with an alcohol range between 55-65%.

7. FILTRATION All tequilas are filtered using different media, starting with a cold filtration through a charcoal filter that removes excess fatty compounds that may give a cloudy appearance to the tequila. They ensure that there are no particles present in the liquid and give a bright finish to our tequilas.

8. AGING Reposado tequilas are matured in oak wood containers for at least 2 months. Añejo tequilas are matured for at least 12 months in white oak barrels, and extra añejo tequilas rest for at least 36 months in white oak barrels.

9. BLENDING/ASSEMBLY

In this process, demineralized water is added to adjust the alcohol content, and tests are performed to ensure consistency in the profile according to the standards of each brand.

Tequila began to be produced in the mid-17th century at a hacienda called Cuisillo, in the state of Jalisco. Today, there are around 160 brands and 12 haciendas that produce it, giving life to one of the most demanded Mexican products abroad.

Currently, mezcal has a "Denomination of Origin" that protects the production of this drink in the states of Durango, Guanajuato, Guerrero, Michoacán, San Luis Potosí, Oaxaca, Puebla, Tamaulipas, and Zacatecas. These are the only regions in the world that have the denomination of origin called mezcal, with Oaxaca being the most representative.

Louis Jacques Daguerre is recognized for his invention of the daguerreotype photographic process. His method required 30 minutes of exposure and was named the Daguerreotype.

As one of Japan's most iconic dishes, sushi is highly popular around the globe; however, did you know that the true origin of this dish is in China?

The Chinese discovered a method to keep fish fresh, which consisted of fermenting it by adding salt and several layers of rice; this method was called narezushi. Back then, only the fish was consumed and the rice was discarded.

When this method reached Japan around the 8th century A.D., they preferred to consume the fish and rice together, becoming a cooking method called Seiseizushi.

This way of cooking fish with rice was innovated in the 19th century by Matsumoto Yoshiichi, who added one more ingredient: vinegar. In addition to this, the dish could be accompanied by vegetables or other preserved foods.

In a short time, the practice of wrapping sushi in nori seaweed began, which is the earliest precursor to the classic sushi we know today.

As every year, from May to September, we experience the Sea Turtle season in the Mexican Caribbean. Hoteles Solaris de México is prepared to welcome this wonderful marine species and protect its hatchlings.

Around the world, there are 8 species of sea turtles, of which only 4 come to nest on our beautiful beaches in Cancun. These are the LOGGERHEAD, the GREEN, the HAWKSBILL, and the LEATHERBACK. The leatherback turtle has never been seen on our hotel's beach.

During the first fortnight of May, turtle mating begins, which lasts approximately 24 hours. The male turtle undertakes a great ritual to impress the female, copulating on the surface.

At the end of May, the egg-laying process occurs, which consists of the following steps:

• They emerge from the sea in a straight line.
• They select the nesting site.
• They remove the sand to make a bed (the place where the nest will be).
• They dig an incubation chamber.
• They lay between 80 to 200 eggs per turtle (depending on the species).
• They cover the incubation chamber along with the eggs to protect them.
• They return to the sea in a straight line.

Turtles only lay eggs at night and this process takes about 3 hours from the moment they emerge from the sea. When they make contact with the air, they secrete a liquid from their eyes, which helps protect them from the sand while digging the nest; they do NOT cry. Incubation lasts approximately 45 to 70 days, depending on the turtle species and the climate surrounding the nests. Turtles lay eggs 1 to 5 times per season.

The process we have for the "Sea Turtle Protection and Conservation Program on Cancun beaches" is that as soon as the turtle touches our hotel beach, it is the responsibility of qualified personnel to help relocate all the eggs into a "protection corral" so they can be monitored and cared for until they hatch.

One must wait for the turtle to begin laying eggs to take each one, and upon finishing, dig a chamber-shaped hole inside the "protection corral" (in the same way the turtle does) about 60 cm deep, smoothing the bottom to accommodate the eggs. This chamber is covered with sand, and a sign is made with the data regarding the number of eggs, the species of turtle, measurements, the laying date, and the probable hatching date.

During the incubation of the turtles, the prevention staff, who have taken courses taught by biologists working for the state conservation campaign on procedures to be followed for sea turtle conservation and nesting habits, are dedicated to the surveillance, care, and protection of the species in our hotel beach area. Days before hatching, a mesh is placed around the nest to protect the turtles' exit so they are not devoured by predators and can reach their release safely.

At the time of hatching, depending on the time of day, they are kept safe to be released when the predatory seabirds that feed on the hatchlings are not flying over the coast. It is said that the first 10 years of each turtle are called "Lost Years" because it is not known exactly where they go and very few of them survive, due to the long journey they take.

Year after year, the release that takes place on the coast of Quintana Roo becomes a celebration of the efforts of civil associations protecting this reptile and the local government.

SEA TURTLE SEASON RULES

• Notify the prevention staff if you see a turtle during the night.
• Observe from a distance of 10 meters.
• Do not touch the turtle.
• Do not use flash.
• Do not smoke.
• Do not enter the egg protection corrals.
• Do not handle the hatchlings without prior authorization from qualified personnel.
• Keep the beaches and the sea clean by using trash cans. Remember that plastic bags, straws, plastic containers, and all types of trash that float in the sea are lethal to turtles.

The Sea of Cortez, also known as the Gulf of California, is an extension of the Pacific Ocean located between the Baja California peninsula and the states of Sinaloa and Sonora.

The main consequence of the Conquest of Mexico, completed by the Spanish in 1521, was the mestizaje between indigenous and Spanish people.

The territory we know today as Mexico sheltered very diverse indigenous groups, perfectly differentiated from each other, not only by their varied cultural elements, such as traditional attire, housing, religious customs, or cuisine, but by something more sharp and evident: LANGUAGE.

At the end of the 20th century, our country remains one of the main ones on the planet regarding its indigenous cultural diversity. Regarding the number of its living indigenous languages, Mexico is in second place with 68 languages; in this case, most indigenous cultures are many centuries old, some even millennia old.


Its linguistic heritage is made up of 11 linguistic families, 68 groups of this type, and 364 variants, according to the figures.

When the Spanish arrived in Mexico, a survey of the number of languages spoken in the country was not conducted; the oldest data suggests that towards the 17th century, up to 100 languages were still spoken. With the 68 existing languages, Mexico is the country in America with the largest number of native language speakers.

In Baja California Sur, only 1% of the population continues to use indigenous languages, even though all the native languages of this State are extinct. In this part of the Republic, the following are spoken:

The German delicacy that conquered the world

Today we celebrate the irresistible delicacy of simple ingredients that conquered even the most demanding palate.

Today, the hamburger is one of the most popular dishes not only in the United States, but all over the world; however, how did this delicious dish become what it is today?

It was during the 19th century in Hamburg, Germany, that one of its dishes was becoming popular: the Hamburg steak, which consisted of minced meat used to make meatballs.

However, what really made this dish evolve into what we believe was "The First hamburger," was simply placing two pieces of round bread. This dish was accompanied by beets, pickles, tomato slices, or even chives.

Did you know that the city of Hamburg was the bridge that managed to connect Germany and the United States of America?

After the migration of Germans to said country, many took the recipe for such an appetizing steak with them, and it wasn't until 1885 that Charlie Nagreen sold this dish at fairs in Wisconsin.

The evolution of the hamburger

During the 20s, the German dish was innovated to the point that Lionel Sternberger added cheese to this delicacy, and in 1921 White Castle, the first fast-food hamburger establishment, was born in Kansas. Its creators? Billy Ingram and Walter Anderson.

Over time, hamburgers became the main menu item in roadside diners and soda shops, where they are also frequently served together with French fries and milkshakes. Does that sound familiar?
