A traditional, delicious, and very Mexican dish!
Solaris Hotels20/01/2017The quesadilla is a Mexican dish consisting of a folded corn or flour tortilla filled with any cheese that melts when heated (Oaxaca cheese or quesillo, Chihuahua cheese, Manchego cheese, etc.), or with many other ingredients.
Did you know that a quesadilla must be folded in half in the shape of a half-moon? Because if they are not folded and the cheese (and extras) are placed between two open tortillas, they are called sincronizadas. These can also be made with either flour or corn tortillas.
Quesadillas in Mexico
In northwestern and northern Mexico, quesadillas (preferably with flour tortillas) are griddled or grilled, and in addition to melted cheese, they are usually accompanied by various ingredients. Meanwhile, in the center and south of the country, they are made almost exclusively with corn tortillas.
In the Metropolitan Area of the Valley of Mexico, they are one of the most popular street foods, and the most common varieties are quesadillas with squash blossoms, potatoes, mushrooms, huitlacoche, chorizo, sliced jalapeño peppers, quelites, chicharrón, beef brains, picadillo made with ground beef or pork, tinga, etc.
In the states of northwestern Mexico, battered fish or seafood quesadillas are common, prepared in the style of Ensenada, Baja California, which are usually served with salsas, lettuce, onion, and guacamole.
In Sinaloa, there is a special variety called taco gobernador, which consists of a grilled quesadilla made with a corn tortilla, heated until toasted, and filled with shrimp machaca.
