The art of making beer
Gastronomy04/08/2017 Beer is an alcoholic beverage originating from Mesopotamia (from the year 4000 BC), un-distilled and with a bitter taste, made from germinated barley grains and other cereals, whose starch is fermented in water with yeast. It generally has an amber color with tones ranging from golden yellow to black, passing through reddish browns. In the Middle Ages, it was the monks who perfected the brewing process, incorporating the use of hops, a plant that gives beer its characteristic bitter taste and helps preserve it. This recipe then became popular worldwide. Due to the cold climate, other Northern European countries like Germany and England, in turn, became major beer producers. By the 18th century, with the industrial revolution, came the golden age of beer, which became mass-produced thanks to the incorporation of the steam engine into the brewing industry. Louis Pasteur discovered high-fermentation yeast, which made precise control of the transformation of sugar into alcohol possible. During the 19th century, Czech and German brewers developed beers with a better appearance, filtered and clearer beers. Around the 1970s in the United Kingdom, a decision was made to create a beer that was completely different, more attractive, and complex in taste, with more body, flavor, and aroma. The idea was born to create something on a smaller scale to maintain maximum control over the brewing process, ensuring higher quality and freshness; this drink was called craft beer. Craft beer is made exclusively with traditional ingredients in their purest and most natural state: barley malt, water, hops, and yeast. Filler cereals are NOT used, which is why craft beer offers quality products instead of low prices and advertising. In the late 1980s, craft beer arrived in the United States, producing less than 15,000 liters per year. In 1995, the first Mexican craft beer, named COSACO, was created by Gustavo González, an enthusiast of quality beer flavors, due to the lack of this beverage's availability in Mexico. He began brewing this draft beer at home. In Mexicali, Baja California, in 2002, Cervecería de Baja California (CUCAPÁ) opened, and in Jalisco, in December of the same year, one of the most famous, Cervecería Minerva, opened.
