Wine and cheese, the best combination for your palate
Gastronomy27/04/2017Did you know that PAIRING is the act of tasting WINE with any food, but the most famous one is CHEESE?
Pairing wine with cheese is a French tradition. The main concept of pairing is that certain elements of wine and food, such as texture and flavor, react differently when mixed; finding the right combination of these will make eating a more pleasant experience for the palate.
Regarding wines...
WHITE OR ROSÉ WINE: soft cheeses: ricotta, feta, mozzarella, cream, and goat cheese.
RED WINE: cheddar, manchego, cantal, gruyere, parmesan, and the rest of the strong cheeses.
Regarding bread...
FRESH CHEESES: whole grain-based breads or fine herb breads.
SOFT-RIND CHEESES: grain, herb, or spice breads.
SEMI-SOFT CHEESES: neutral bread such as baguette, French, or focaccia.
BLUE CHEESES: small pieces of white bread.
HARD CHEESES: white breads.
THE STRONGER THE CHEESE, THE MORE BODY THE WINE SHOULD HAVE.
That is why our Executive Sous Chef Horacio Pérez and our Food and Beverage Assistant Karen Barrios García have some exquisite recommendations for us below:
EDAM CHEESE WITH "CASA MADERO CHARDONNAY" WHITE WINE Dutch cheese traditionally made in a ball shape covered in paraffin. Also known as ball cheese. Light straw-colored white wine with green hues. Aromas of pear, apple, citrus, and other tropical fruits stand out with a fine touch of pleasant wood. With a fresh and dry flavor, leaving a slight buttery taste. |
ROQUEFORT CHEESE WITH "FAUSTINO CRIANZA TEMPRANILLO" RED WINE French blue cheese made from coagulated sheep's milk. A cheese with a strong and intense flavor and smell. Red wine with an aroma of ripe black fruits, light wood, and sweet spices with elegant balsamic nuances and a hint of vanilla. |
BRIE CHEESE WITH "VILLA MONTEFIORI SHIRAZ MERLOT" RED WINE Hard-paste cheese made with raw cow's milk, covered with a soft layer formed by mold. Intense colored red wine with an aroma of spices and the vividness of forest fruits. |
GOAT CHEESE WITH "SÉPTIMA MENDOZA MALBEC" RED WINE It has a more acidic flavor than other cheeses, they tend to be creamier and softer than cow's milk cheeses, and their flavor is strong, just like their smell. Red wine with aromas of fresh cherries, notes of strawberry jam, reminiscences of rosemary, watermelon, pear, and raspberry. |
